Pumpkin Spice Waffles

There is nothing like gathering around the table on a nice fall morning right before church and soaking in the sights and scents of Fall. Especially the one coming from Mama’s kitchen. Hey Y’all! What’s on the menu for today?……

Pumpkin Spice Waffles


  • Prep time: 20 mins.
  • Cook time: 6-7 mins.



1/2 cup coconut oil
1/2 cup sugar
1/2 cup brown sugar, packed
15 ounces pure pumpkin puree
2 eggs (separated)
1/2 cup whole milk
1 tsp Pumpkin Pie Spice Extract*
1 tsp vanilla
1 1/2 cups all purpose flour
1 tablespoon baking powder
1/2 tsp salt

For something extra add 1/2 cup finely chopped pecans


Preheat waffle iron according to directions.
In a large bowl, whisk the coconut oil (in liquid form), both kinds of sugar, pumpkin puree, egg yolks, and milk together until smooth.
Add the pumpkin pie spice extract and vanilla extract and stir.
In a separate bowl mix the flour, baking powder, and salt together.
Stir the flour mixture into the pumpkin mixture, just until combined.
In the bowl of an electric mixer, whisk egg whites until they are white and fluffy with soft peaks.
Very gently fold the egg whites into the batter.
Scoop about 3/4 cup of batter onto the waffle iron and cook , Batter will be thick consistency. Top with butter, syrup, whipped cream, and/or cinnamon if desired.


Alternative to Pumpkin spice extract in case you need it:

2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg

Peaches and Cream Bread


Hello, Everyone I know it has been a few days since I shared anything. However, I have the most delicious recipe that surely will make up for it. I live in the wonderful state of Georgia. Home of the Bulldogs, Ga. Tech., Atlanta’s fast growing celebs’ city and last but not least “The Peach State”. We have a recipe for peach everything, my favorite is this bread that will as we say in the south “make you wanna slap yo’ mama”. Southerners believe in honor your mother and father, so if we say THAT! It means it’s definitely something you want to try. ENJOY FRIENDS!


Peaches and Cream Bread 


  • 3 c. flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 1/2 c. sugar
  • 1/2 c. oil
  • 1/2 sour cream
  • 1 c. milk
  • 3 eggs
  • 1 tsp. vanilla extract
  • 4 c. peaches (diced)

Glaze Cream

  • 1 c. powdered sugar
  • 1/2 c. heavy cream
  • 1 tsp. vanilla extract



  • Preheat oven to 350 degrees. grease 2 loaf pans.
  • In large mixing bowl whisk together flour, salt, sugar and baking powder. Mix well.
  • Then Add oil, sour cream, egg yolks and milk til combined.
  • Fold in peaches and pour evenly into greased pans.
  • Bake for 75-90 minutes, poke with toothpick to see if it is done.
  • Glaze: mix powdered sugar, heavy cream and vanilla extract until combined completely.
  • Once done and cooled remove loaves from pan place on serving platter add glaze then slice into 1/2 inch thick serving sizes.
